Purpose of activity: to assist the youth of the parish in raising funds to see the Pope at world youth day 2013.

Description: The Knights worked side by side with the SEAS world youth day pilgrims to assist them in raising funds to attend World Youth Day 2013. Numerous events and activities occurred during the past year, including a Mexican dinner during Cinco de Mayo (May 5th), and Pancake breakfast during the first half of the fraternal year. Working together with encouragement and support the Knights assisted the youth in reaching their goal.

To assist the SEAS Youth in raising funds to attend World Youth Day 2013 the Council decided to sponsor a Cinco de Mayo Mexican dinner on May 5th 2012.  To facilitate this event, the council was joined by the SEAS social committee, of which many members are Knights and their wives.  The World Youth Pilgrims participated in the event setup, served the meals, bused the tables and assisted with cleanup.   To encourage participation the council decided to make this a donation event rather than sell tickets with all proceeds going to assist the World Youth Day Pilgrims.  Menu selection was:  chicken & cheese enchiladas, Mexican rice, beans & salad, Mexican cookies and ice cream for dessert.

The event coincided with the Alaska State Council 2012 state convention and an invitation to attend the dinner event was extended to the convention delegates.   The state council also extended an invitation to Msgr. Chavez, to visit Alaska and make presentations on St. Juan Diego and Our Lady of Guadalupe. 

The state council included the Cinco de ‘Mayo dinner and the Chavez presentation into the convention agenda.

Schedule of events:  Friday May 4th, food preparation, Saturday May 5, day of the event:  afternoon setup and food preparation, 5:30PM Saturday evening Mass, following the mass was the dinner, with Monsignor Chavez’s presentation following the dinner.  The Our Lady of Guadalupe Marian image was prominently displayed during mass and for the presentation.  Msgr. Chavez also concelebrated the mass and delivered the homily.

Over two hundred meals were served that evening and event generated over $1,500 for the youth.  Forty persons attended the Guadalupe presentation after the dinner.

Continuing the Council’s support for the 2013 world youth day pilgrims from St. Elizabeth Ann Seton Parish the Knights worked side by side with the youth during the monthly pancake breakfast held during September, October, November and December 2012.  Funds raised from these breakfast events were donated to the youth.  Rather than an outright donation to the youth knights mentored and worked side by side with the pilgrims.  This included the set-up, cooking, serving and clean-up.  The youth earned $1,100 for their trip cooking pancakes with the Knights.

Additional fundraising projects the Knights assisted the youth with in their efforts to see the Pope in 2013, included assisting the youth with cookie mix preparation and sales during advent and Lenten soups & kits during the lent season – “Just add water”.
